अदरक की खेती गर्म तथा आर्द्रता वाले स्थानों में की जाती है | मध्यम वर्षा या सिंचाई बुवाई के समय अदरक की गाँठों के अंकुरण के लिये आवश्यक होती है| इसके बाद थोड़ी ज्यादा वर्षा पौधों को वृद्धि के लिये तथा इसकी खुदाई के एक माह पूर्व सूखे मौसम की आवश्यकता होती हैं| समय पर वुवाई या रोपण अदरक की खेती के लिये अति आवश्यक हैं| 1500 से 1800 मिलीमीटर, वार्षिक वर्षा वाले क्षेत्रों में इसकी खेती से अच्छी उपज प्राप्त की जा सकती हैं|

अदरक की खेती बलुई दोमट जिसमें अधिक मात्रा में जीवाशं या कार्बनिक पदार्थ की मात्रा हो वो भूमि सबसे ज्यादा उपयुक्त रहती है| खेत तैयार करते समय 30 से 35 टन प्रति हेक्टेयर के हिसाब से सड़ी हई गोबर या कम्पोस्ट की खाद खेत में सामन्य रूप से फैलाकर मिला देना

अदरक की खुदाई लगभग रोपण के 8 से 9 महीने बाद कर लेनी चाहिये जब पत्तियाँ धीरे-धीरे पीली होकर सूखने लगे|
